Smokey Bolognese with Herby Aioli

Ingredients

  • Dried pasta shells
  • Beef mince
  • Smoked Paprika
  • Grated cheese
  • Canned tomato, puree
  • Onion powder (optional)
  • Scallion/Shallot
  • Sproutje Herby Aioli
  • Sproutje Herby Umami Crunch
  • Olive oil

 Instructions:

  1. Bolognese sauce:

    • Heat 3 tbl oil in a pan over medium heat. Add paprika and onion powder (if using) and fry for 30 seconds to bring out flavour and aroma. 
    • Add in beef mince, turn heat to high and fry till lightly browned. 
    • Add in canned tomatoes, reduce to medium heat and simmer for around 15 mins or until sauce is reduced and you start to see some oil separation. 
  2. Pasta:

    • Whilst sauce is reducing, bring another pot of water to boil with enough sea (to taste like sea water). 
    • Boil pasta shells as per packet instructions. 
    • Drain then toss into finished sauce. 
  3. Plating:

    • Spoon equal amounts of pasta across 4x plates. 
    • Squeeze on approx 1 tbl of Herby Aioli. 
    • Sprinkle over cheese, scallions and Herby Umami Crunch.
