Instructions:

Baby potatoes:
- Boil potatoes in lightly salted water for 10-15mins till well cooked (they should be soft enough to smash with a fork).
- Drain, smash and set aside (but keep the water).

Broccoli:
- In the same water as the potatoes, boil broccoli for 3 mins.
- Drain and set aside

Finish the broccoli and potatoes:
- Place large pan over medium heat. Add 2 tbl olive oil, add in potatoes and fry for 3 mins. Add broccoli and flip potatoes, fry for another 3 mins. Toss in the parsley and keep on the heat for 10 seconds.
- Remove from pan and set aside, making sure to keep the oil.

Salmon:
- Place pan over high heat. Add in 1 tbl olive oil and quickly swish across pan. Add in salmon and reduce heat to medium. Season with salt
- Cook for 3-4 mins. Flip, brush generously with Miso Sesame Ginger sauce and cook for another 2-3 mins or until your desired level of doneness.
- Remove from pan.

Plating:
- Distribute broccoli and potatoes across 4x plates.
- Place salmon over the broccoli and potatoes and drizzle the parsley oil over each dish.
