Lemongrass Kaffir Lime Shrimp Stir Fry

Ingredients

  • Flat rice noodle (dry) - 250g
  • Peeled prawns - 300g
  • Lime, cut into quarters - 1 whole
  • Scallion/shallot, finely sliced - 2 stalks
  • Sproutje Lemongrass Kaffir Lime Everything Sauce - 90ml
  • Sproutje Spicy Umami Crunch - 10 g
  • Olive oil

Instructions:

  1. Cook the Noodles:

    • Cook as instructions on packet.
    • Drain in colander, drizzle with oil and toss to coat noodles. Place aside for later.
  2. Stir Fry:

    • Place a pan over low-med heat for 3mins to bring to heat. 
    • Add a splash of oil and stir fry prawns till cooked. 
    • Add in scallions and toss through.
    • Add in Lemongrass Kaffir Lime sauce and toss through. Keep on heat and stir for 2-3mins.
  3. Plating:

    • With tongs, distribute equal amounts of noodles and prawns across 4x plates. 
    • Sprinkle with Spicy Umami Crunch and garnish with lime.
